Last week I decided to try a recipe I found on the internet http://allrecipes.com/Recipe/Ricotta-Gnocchi/Detail.aspx. Lately I've been having a hard time finding an amazing dinner recipe from this site. It seems like all the recipes get rave reviews, but when I make them they don't taste as wonderful as the reviewers said. I'm pretty sure it's not me, it's the recipe. But I found this recipe for ricotta gnocchi and decided to give it a try. It's a variation of the traditional potato gnocchi and uses ricotta and parmesan instead. It turned out amazing! The sauce helped too. It is a very authentic Italian red sauce recipe with sauteed garlic, diced tomatoes, fresh basil leaves, salt, and pepper, and cubed fresh mozzarella (not the stuff you shred for pizzas--the soft, mushy, melt in your mouth kind). You can add a dash of crushed red pepper for an added zing. I also added a sprinkle of brown sugar and a couple of shakes of oregano. This is definitely a repeat recipe at my house.
